Instructions
- Cook the Noodles: Cook the fresh egg noodles according to the package instructions until al dente. Drain well and set aside to prevent sticking.
- Heat Oils: In a large wok or frying pan, heat the vegetable oil and sesame oil over medium-high heat to prepare for stir-frying.
- Add Aromatics: Add the minced garlic and grated ginger to the heated oils and stir-fry for about 30 seconds until fragrant, releasing their flavors.
- Stir-Fry Vegetables: Add the julienned red bell pepper, broccoli florets, sliced mushrooms, and julienned carrot. Stir-fry for 4-5 minutes until the vegetables are tender-crisp, maintaining their vibrant texture and color.
- Add Noodles: Add the cooked noodles to the pan with the vegetables and gently toss to combine evenly.
- Prepare Sauce: In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, sugar, and ground white pepper to create a savory sauce.
- Combine Sauce and Noodles: Pour the sauce mixture over the noodles and vegetables, then toss thoroughly to ensure every strand and piece of vegetable is coated and heated through.
- Add Green Onions: Stir in the sliced green onions and toss the mixture once more for freshness and added flavor.
- Garnish and Serve: Transfer the stir-fried noodles to a serving platter. Sprinkle with toasted sesame seeds and garnish with fresh cilantro for a burst of aroma and color.
- Enjoy: Serve immediately to enjoy the dish at its best taste and texture.
Notes
- For a vegetarian version, substitute oyster sauce with vegetarian mushroom sauce or additional soy sauce.
- If fresh egg noodles are unavailable, dried spaghetti can be used as a substitute.
- Add protein such as cooked chicken, shrimp, or tofu for a more substantial meal.
- Adjust the amount of sugar and sauces according to your taste preference.
- To keep noodles from sticking after cooking, toss them lightly with a bit of oil before setting aside.
- Keep vegetables crisp by not overcooking during stir-fry; they should retain a slight crunch.
