Description

A classic meatloaf recipe combining ground beef with aromatic herbs and spices, baked to perfection and paired with a rich, creamy mushroom gravy. This hearty dish is perfect for family dinners and comforting meals.

Ingredients

Scale

Meatloaf

  • 2 pounds fresh ground beef
  • 1 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Mushroom Gravy

  • 2 cups fresh mushrooms, sliced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups beef broth
  • ½ cup heavy cream

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a casserole dish or line a baking sheet with parchment paper to prepare for baking the meatloaf.
  2. Prepare Meatloaf Mixture: In a mixing bowl, combine the ground beef, breadcrumbs, finely chopped onion, minced garlic, beaten eggs, ketchup, Worcestershire sauce, dried thyme, dried oregano, salt, and freshly ground black pepper. Mix gently until all ingredients are just combined to avoid a dense texture.
  3. Shape and Bake: Shape the meat mixture into a loaf and place it in the prepared dish. Bake in the preheated oven for 50 to 60 minutes or until a meat thermometer inserted in the center reads 160°F (71°C), ensuring the meatloaf is fully cooked.
  4. Make Mushroom Gravy: While the meatloaf is baking, prepare the gravy. In a skillet, melt the unsalted butter over medium heat. Add the sliced mushrooms and sauté until they turn golden brown. Sprinkle the flour over the mushrooms and stir continuously for about 2 minutes to form a roux. Gradually whisk in the beef broth and continue cooking until the gravy thickens. Stir in the heavy cream and heat through.
  5. Rest and Serve: Once the meatloaf is done, allow it to rest for a few minutes outside the oven to retain juices. Slice the meatloaf and serve warm topped with the creamy mushroom gravy.

Notes

  • Use a meat thermometer to ensure the meatloaf is cooked safely to 160°F (71°C).
  • Letting the meatloaf rest before slicing helps keep it moist and tender.
  • The mushroom gravy can be made ahead and reheated for convenience.
  • For a healthier option, substitute ground beef with ground turkey or chicken.
  • Breadcrumbs can be replaced with oats for a gluten-free option if using certified gluten-free oats.
