- 4 white fish fillets such as cod, halibut, or tilapia
- 3 bell peppers (red, yellow, and green, thinly sliced)
- 1 small red onion (thinly sliced)
Seasonings and Herbs
- 3 tablespoons olive oil
- 2 cloves garlic (minced)
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh parsley (chopped)
- 1 tablespoon fresh dill (chopped)
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Lemon wedges for serving
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan to prevent sticking.
- Prepare the Vegetables: In a bowl, combine the thinly sliced bell peppers and red onion with 2 tablespoons of olive oil, minced garlic, dried oregano, salt, and black pepper. Toss well to evenly coat the vegetables with the seasonings.
- Arrange the Vegetables: Spread the seasoned vegetables evenly in the prepared baking dish, creating a flavorful base for the fish.
- Add the Fish: Place the white fish fillets on top of the bed of vegetables, ensuring they’re evenly spaced for even cooking.
- Season the Fish: Drizzle the remaining tablespoon of olive oil and the fresh lemon juice over the fish fillets. Then sprinkle the chopped fresh parsley and dill on top for an aromatic finish.
- Bake: Put the baking dish in the preheated oven and bake for 15 to 20 minutes, or until the fish easily flakes with a fork and the vegetables become tender.
- Serve: Serve the herb baked fish warm, accompanied by extra lemon wedges for squeezing over the dish to taste.
Notes
- This recipe also works wonderfully with other fish varieties such as salmon or trout for a richer flavor.
- For an enhanced aroma and taste, add a splash of white wine to the baking dish before placing it in the oven.
- Serve the baked fish and vegetables over cooked rice, couscous, or quinoa to make a complete and filling meal.
