Description

Herb Baked Fish with Rainbow Bell Peppers is a vibrant, healthy Mediterranean-inspired dish featuring flaky white fish fillets baked atop a bed of colorful bell peppers and red onion. The fish is seasoned with fresh herbs like parsley and dill, garlic, and a splash of lemon juice, making it a flavorful and easy-to-prepare main course that’s perfect for a nutritious weeknight dinner.

Ingredients

Scale

Fish and Vegetables

  • 4 white fish fillets such as cod, halibut, or tilapia
  • 3 bell peppers (red, yellow, and green, thinly sliced)
  • 1 small red onion (thinly sliced)

Seasonings and Herbs

  • 3 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh parsley (chopped)
  • 1 tablespoon fresh dill (chopped)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Lemon wedges for serving

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan to prevent sticking.
  2. Prepare the Vegetables: In a bowl, combine the thinly sliced bell peppers and red onion with 2 tablespoons of olive oil, minced garlic, dried oregano, salt, and black pepper. Toss well to evenly coat the vegetables with the seasonings.
  3. Arrange the Vegetables: Spread the seasoned vegetables evenly in the prepared baking dish, creating a flavorful base for the fish.
  4. Add the Fish: Place the white fish fillets on top of the bed of vegetables, ensuring they’re evenly spaced for even cooking.
  5. Season the Fish: Drizzle the remaining tablespoon of olive oil and the fresh lemon juice over the fish fillets. Then sprinkle the chopped fresh parsley and dill on top for an aromatic finish.
  6. Bake: Put the baking dish in the preheated oven and bake for 15 to 20 minutes, or until the fish easily flakes with a fork and the vegetables become tender.
  7. Serve: Serve the herb baked fish warm, accompanied by extra lemon wedges for squeezing over the dish to taste.

Notes

  • This recipe also works wonderfully with other fish varieties such as salmon or trout for a richer flavor.
  • For an enhanced aroma and taste, add a splash of white wine to the baking dish before placing it in the oven.
  • Serve the baked fish and vegetables over cooked rice, couscous, or quinoa to make a complete and filling meal.
