Description

Green Beans

  • 1 pound green beans (trimmed)
  • 1-2 cups water

Sauté Mixture

  • 3 tablespoons olive oil (divided)
  • ½ cup white onion (finely diced)
  • 2 cloves garlic (finely minced)

Seasoning

  • 2-3 tablespoons red wine vinegar (or balsamic vinegar, to taste)
  • 1- teaspoons salt (to taste)
  • ¼ teaspoon black pepper (to taste)


Instructions

  1. Cook the Green Beans: Pour enough water into the bottom of a large saucepan or skillet so that it covers the bottom by ¼ inch. Bring the water to a boil, then reduce heat to medium-low and add the green beans. Cover with a lid and cook for 6-8 minutes until the beans are bright green and tender. Drain the beans using a colander and set aside.
  2. Sauté the Onion and Garlic: Add 1 tablespoon of olive oil to the same dry skillet over medium heat. Add the finely diced onions and sauté for 2-3 minutes until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add the Green Beans and Season: Turn off the heat and add the cooked green beans back into the skillet with the onions and garlic. Pour in the red wine vinegar, then season with salt and black pepper to taste. Toss everything thoroughly to combine. Serve immediately with extra salt and pepper if desired.
