Description

This Garlic Parmesan Sweet Potato recipe features tender, roasted sweet potato cubes coated in a flavorful blend of garlic, butter, and herbs, then topped with savory parmesan cheese and fresh parsley. Perfect as a delicious and healthy side dish, it combines crispy edges with a soft interior for a comforting bite.

Ingredients

Scale

Sweet Potatoes

  • 2 medium sweet potatoes

Seasonings and Toppings

  • 2 tablespoons melted butter or olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon paprika (optional)
  • 1/3 cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare the sweet potatoes: Peel the sweet potatoes and cut them into 1 to 1.5-inch cubes. Place the cubed sweet potatoes into a large mixing bowl.
  3. Season the sweet potatoes: Add melted butter or olive oil, minced garlic, salt, black pepper, and optional garlic powder and paprika to the bowl. Toss everything together until all the sweet potato cubes are evenly coated with the seasoning mixture.
  4. Roast the sweet potatoes: Spread the seasoned sweet potato cubes in a single layer on the prepared baking sheet. Roast in the oven for 30 to 35 minutes, flipping halfway through the cooking time, until the cubes are crispy and golden on the edges and soft inside.
  5. Add parmesan cheese: Remove the sweet potatoes from the oven and immediately sprinkle them evenly with grated parmesan cheese. Toss gently so the cheese melts and adheres to the warm sweet potatoes.
  6. Garnish and serve: Finish by sprinkling chopped fresh parsley on top. Optionally, drizzle with any leftover garlic butter from the pan for an extra burst of flavor. Serve warm.

Notes

  • You can substitute butter with olive oil to make it dairy-free, though parmesan cheese will still contain dairy.
  • Flipping the sweet potatoes halfway through roasting ensures even cooking and crispy edges.
  • Adjust the seasoning according to taste – paprika adds a subtle smoky flavor, but can be omitted if desired.
  • Using fresh garlic gives the best flavor, but garlic powder can be used if short on time.
  • For a crispier texture, spread the sweet potatoes in a single layer without overcrowding the pan.
