Meatloaf

  • 10 oz ground beef
  • 1 egg
  • 2 cloves garlic, peeled and minced
  • 1/3 cup panko breadcrumbs
  • 1 chipotle pepper in adobo sauce, finely chopped
  • 2 tsp meatloaf spice blend
  • 3 tbsp golden raisins, roughly chopped
  • Salt and pepper, to taste

Chipotle Ketchup Glaze

  • 3 tbsp ketchup
  • Chopped chipotle pepper from above, amount depending on desired spice level
  • Salt and pepper, to taste

Potatoes

  • 3/4 lb Yukon gold potatoes, halved lengthwise and thinly sliced crosswise
  • 2 tsp olive oil
  • Salt and pepper, to taste


Instructions

  1. Preheat Oven: Preheat the oven to 450 degrees Fahrenheit to prepare for baking the meatloaf.
  2. Prepare Ingredients: Wash and dry all fresh produce. Peel and finely mince the garlic cloves. Roughly chop the golden raisins. Halve the Yukon gold potatoes lengthwise and then thinly slice crosswise. Finely chop the chipotle pepper, and thoroughly wash your hands and cutting board immediately afterward to avoid irritation.
  3. Make Chipotle Ketchup: In a small bowl, combine the ketchup with as much chopped chipotle pepper as preferred to control spiciness. Season with salt and pepper to taste and set aside.
  4. Mix Meatloaf: In a large bowl, combine the ground beef, egg, minced garlic, panko breadcrumbs, chopped raisins, and meatloaf spice blend. Season with salt and pepper, then gently mix with your hands until just combined to keep the meatloaf tender.
  5. Shape Meatloaf: Place a large piece of foil or parchment paper on a sheet pan. Place the meat mixture in the center and gently roll and shape it using the foil into a tightly packed loaf approximately 10 inches by 3 inches, flattening it to line the pan.
  6. Glaze Meatloaf: Evenly spread the prepared chipotle ketchup glaze atop the formed meatloaf.
  7. Bake Meatloaf: Place the meatloaf in the oven and bake for 20 to 25 minutes, until it is lightly browned and cooked through. Remove from oven and let rest for at least 2 minutes.
  8. Cook Potatoes: About 10 minutes into baking, heat 2 teaspoons of olive oil in a large non-stick pan over medium-high heat until hot. Add the sliced potatoes and cook, stirring occasionally, for 11 to 13 minutes or until the potatoes are browned and crispy. Season with salt and pepper to taste.
  9. Serve: Once the meatloaf has rested, slice it crosswise into 6 equal-sized pieces. Transfer both the sliced meatloaf and crispy potatoes to serving dishes. Serve immediately and enjoy your hearty, smoky meal.
